Mexican Black Beans w/Pork Ribs & Mountains of Things, October 26th, 6-9:30pm
The centerpiece for this class are the Black Beans and Pork Ribs, which are surrounded by chopped and sliced vegetables and other accompaniments. The recipe was first published in The Mexican Gourmet, a book I co-authored with Maria Dolores Torres Yzabal in 1995. I still remember how delicious this dish was when she first made it for me. The accompaniments add flavors and textures to the deeply satisfying beans and pork.

Enjoy an evening in Marseille without leaving the country! We will start the Bouillabaisse by making a stock with fish bones and use a variety of fish to make the stew.

Mexican Cooking ~ The Yucatan, December 14th, 6-9:30pm
The classic festive dish of the Yucatan is a whole pig roasted over hot stones in a pit in the ground. We will do an instant pot (or oven friendly) version with pork shoulder pieces and Yucatecan spices wrapped in Banana Leaves. We will also make corn tortillas from scratch to enjoy it with.

French Classics, Boeuf Bourguignon, December 21st, 6-9:30pm
Because we are making this deeply satisfying French Classic in the time frame of a class, we will be using an instant pot, but instructions will be included for doing it on the stove top or in the oven. We will start with a salt cod and potato puree on toasts, called Brandade and finish with a green salad and cheese board followed by a chocolate mousse.
