Most restaurants serve lobster bisque from a base; we will make it from scratch—save up those lobster shells in your freezer to make yours at home once you learn the techniques involved. Taught by Shelley Wiseman who cooked in Paris for six years before becoming a food editor at Gourmet magazine.
